AT GERARDO’S PIZZERIA, EVERY PIZZA IS MADE WITH SOUL

Flour

Every pizza starts with our flour — carefully sourced from Shepherd’s Grain, where regenerative farming and healthy soil create nutrient-rich grain that’s better for the planet and better for you. From there, we allow our dough to naturally ferment and rise for 72 hours, developing a crust that’s light, flavorful, and easier to digest. Time and soil are our secret ingredients.

Mozzarella

Our mozzarella is made fresh in-house each day. We keep it simple: whole plum tomatoes, sea salt, and a drizzle of pure extra virgin olive oil — never blends, never fillers. Many of our ingredients come directly from local farms that share our commitment to quality and sustainability. This is pizza made with intention — no shortcuts, no compromise — rooted in Sicilian tradition and crafted with care. Every bite reflects the respect we have for our ingredients and the people we serve.
