Learn the Art, Science, and Soul of a Pizzeria

At Gerardo's Pizzeria, we are more than a restaurant—we are a teaching restaurant.


Our mentorship program is designed for passionate individuals who want to immerse themselves in every aspect of an authentic wood-fired pizzeria. Whether you're pursuing a career in hospitality, culinary arts, baking, restaurant management, or simply have a deep curiosity about great food, this program offers real-world experience that cannot be learned from a textbook alone.


For over 25 years, our family has believed that knowledge should be shared. In our kitchen, there are no secrets.

Hospitality & Guest Experience

Great restaurants are built on more than great food.


You'll learn how to create memorable dining experiences, connect with guests, work as part of a team, and understand the importance of genuine hospitality. 


From the moment guests walk through our doors until they leave, you'll experience what it takes to build a loyal community around food.

Dough Making & Fermentation

Dough is alive. You'll work hands-on with multiple styles of dough while learning the science behind fermentation, hydration, temperature control, and flour selection.


Learn to make: Traditional Wood-Fired Pizza Dough, Sourdough Pizza Dough, Focaccia, Black Dough & More. 


You'll gain a deeper understanding of how time, temperature, and ingredients work together to create exceptional pizza.

Wood-Fired Oven Management

The oven is the heart of our restaurant.


Learn how to build, maintain, and manage a traditional wood-fired oven operating at temperatures approaching 850°F. You'll develop an understanding of fire management, heat zones, baking techniques, and the unique skills required to produce authentic wood-fired pizza consistently and efficiently.


This is a craft that requires patience, focus, and respect.

Flour & Regenerative Agriculture

Every great pizza starts with great flour.


We believe understanding where ingredients come from is just as important as learning how to cook them. You'll learn about regenerative agriculture, soil health, grain production, and how farming practices directly impact flavor, nutrition, and sustainability. 


Our partnerships with regenerative farmers help us teach the complete story behind every pizza we serve.

Experience the Entire Restaurant

This mentorship goes beyond the kitchen. 


Participants gain exposure to: Restaurant Operations, Food Preparation, Dough Production, Inventory & Sourcing, Hospitality & Service, Team Leadership,  Sustainability Practices, Family-Owned Business Operations & More. 


You'll see firsthand what it takes to run a successful independent restaurant built on passion, integrity, and craftsmanship.

Gerardo's Pizzeria proudly welcomes international students and culinary professionals through the J-1 Visa Program.


We believe cultural exchange strengthens the restaurant industry and creates opportunities for future hospitality leaders. Our mentorship program provides meaningful hands-on training in an authentic working restaurant environment while sharing the traditions, techniques, and values that have guided our family for generations.

Housing Available

Housing opportunities may be available for qualified mentorship participants and J-1 Visa candidates.
