Our mentorship program is a hands-on opportunity to learn what it really takes to operate a successful food business—rooted in tradition, guided by sustainability, and fueled by passion.

This isn’t just shadowing—it’s hands-on, meaningful work with real responsibility. You’ll get an inside look at how a restaurant truly runs, from managing the dinner rush to prepping ingredients and kneading dough in the early hours.

Master the Dough: 72 Hour fermentation

At Gerardo’s Pizzeria, dough is more than an ingredient—it’s alive. It responds to temperature, hydration, and time. And when you work with it every day, you start to understand it on a deeper level. In our mentorship program, you’ll learn to work with this living element.

At Gerardo’s, sustainability isn’t a trend—it’s a commitment. We proudly source our flour from Shepherd’s Grain, a farmer-owned collective rooted in regenerative agriculture. Their no-till practices and focus on soil health produce richer grain, better nutrition, and a gentler footprint on the planet. Flour grown with intention makes for pizza that not only tastes better—but does better.

From day one, every ingredient matters. And in our mentorship program, you’ll get a behind-the-scenes look at what it takes to run a kitchen grounded in integrity—one that’s earned the Slow Food Award of Phoenix.

At Gerardo’s, we do things the way they’re done in Italy. Chef Gerardo spends his summers working in Italian kitchens, bringing home time-honored techniques and traditions that shape everything we do. Our mentorship program is built on these authentic values—where every team member works side by side, like family.
